Easy Delicious Curry Pumpkin Soup |

Saw this in the paper, made it and wow!!! Flavors are devine. Simple ingrdients and easy and so gourmet tasting! Ingredients:
3 cups canned cooked pumpkin or squash- plain |
or your own precooked and pureed pumpkin or butternut or acorn sqaush |
3 cups chicken broth or vegetable broth for vegetarians |
1/4 cup maple syrup |
2 tsp curry powder or more to taste |
1 tsp cinnamon |
1/2 tsp each: nutmeg, salt and ginger |
1 cup cream |
garnish: toasted pumpkin seeds or a dollop of sour cream |
Directions:
1. Place all but cream into a pot and just heat up. 2. Then stir in cream and correct seasonings if desired ( that is add a bit more curry powder ) 3. Place in bowls and garnish if desired. 4. ENJOY !!! |
