Easy Delicious Banana Muffins |

These are light, tender, moist and most of all easy. Nuts can be added but I like these plain without nuts but used a streusal topping which is also optional . Bakery quality muffins which also freeze well. Ingredients:
2 cups all-purpose flour |
1 tbs baking powder |
1 tsp baking soda |
1/4 teaspoon salt |
3 ripe mashed bananas |
1/2 cup sugar |
1/2 cup sour cream or greek yogurt |
1/4 cup vegetable oil |
2 large eggs |
1 tsp vanilla |
chopped toasted nuts are optional |
streusal topping optional: your favorite recipe |
Directions:
1. In a bowl mash/puree the ripe bananas 2. Add the sugar, eggs, oil, and vanilla 3. Beat smooth with electric mixer 4. Combine flour, baking powder and baking soda 5. Beat in flour into banana mixture until smooth 6. Blend in nuts if using. 7. Line 12 large or 24 smaller muffin tins with paper baking cups 8. Fill muffin cups 2/3 full 9. Sprinkle on streusal if desired 10. Bake in a 375-400F oven about 20 min or tested done in the center 11. Cool a few minutes and then carefully remove from tins to a cooling rack 12. Serve warm or at room temperature |
