great side with lamb chops or any grilled seafood Ingredients:
1/2 cup couscous |
1 cup stock |
1 tsp. curry |
3/4 tsp. salt |
1/4 tsp. pepper-fresh ground |
2 tsp. extra virgin olive oil |
3 tbs. raisins |
1/3 bunch celantro, chopped |
3 tbs.slivered almonds, toasted |
Directions:
1. pour couscous in a bowmix 2. everything else in a saucepan except celantro and almonds, and bring to a boil 3. remove from heat and pour over couscous and seal bowl with plastic wrap 4. alow to sit 10 minutes. 5. fluff couscous up with a fork, top with cilantro and almonds |
