Easy Cupcake Noodle Kugel |

a different spin on noodle pudding, may be a side or dessert! Ingredients:
1 8 oz pkg cream cheese |
1lb cottage cheese |
1 stick butter or margarine melted |
1/2 cup sugar |
1/2 tsp cinnamon |
1 tsp vanilla |
3 eggs |
8 oz egg noodles, cooked and drained |
Directions:
1. Mix all ingrdients except noodles on low speed to blend smooth 2. Mix in the drained noodles 3. Fill either greased cupcake tins or in a 11 x 7 pyrex pan 4. size of cupcake tins determine yield 5. Bake 350 30 to 40 minutes in pan or about 20 minutes for cupcake size 6. Note: these freeze very well 7. may serve with a strawberry topping or sauce if desired |
