Easy Cuban Black Beans And Rice |

Sometimes, one csan cover dry beans with boiling water and let stand a few hours instead of overnight soaking. No matter this is a very easy and tasty recipe and goes well over white or brown rice Ingredients:
1 lb dried black bean, sorted and rinsed |
1 large onion, chopped |
1 large bell pepper, chopped |
5 cloves garlic, finely chopped |
2 bay leaves |
1 14.5-oz can diced tomatoes, undrained |
5 cups water |
2 tbs olive oil |
4 tbs ground cumin (optional) |
2 finely chopped jalapenos( or as desried ) |
1 tsp salt |
4 cups hot cooked rice, for serving |
Directions:
1. Soak beans overnight and discard soak water. 2. Combine all ingredients except rice in crock-pot and cook on low for 6 to 8 hours or until beans are tender and most of the liquid is absorbed. 3. Remove bay leaves. 4. Serve beans over rice. |
