Easy Cream Of Mushroom Soup |

This is my basic delicious soup I make which freezes very well. Ingredients:
1 1/2 lb mushrooms ( variety of choice and chopped to include stems and caps) |
1/2 stick butter or margarine |
4 tbs. flour |
6 cups of chicken, beef or vegetable stock |
1/2 cup to 3/4 cup heavy cream |
salt, pepper to taste |
dash of nutmeg if desired |
dash of sherry if desired |
Directions:
1. Clean and slice mushrooms. 2. Melt butter in pot and sauté mushrooms over medium high heat 3 to 5 minutes. 3. Sir in flour to make a pasty mixture. 4. Gradually stir in hot liquid, whisking constantly until mixture gets thickened. 5. Simmer about 10 minutes. 6. Sir in sherry if desired. 7. Stir in cream last. 8. Sprinkle soup with parsley if desired. 9. Serves 4 to 6 |
