Easy Cream Cheese-pineapple Spread |

I developed my recipe after my hubbie bought one of those Philly cartons that not only cost a lot, but had way too many calories and too much fat. (Not good for diabetics like him). It's easily made with a food processor, blender, or mixer and it certainly costs a lot less than the name brand. Read more . Adding fruit and the juice according to your taste personalizes it, too! I serve this with those wonderful new All Bran crackers! Might as well get some good fibre, too! Ingredients:
2-8 oz packages neufchatel cheese (i use store brand) |
1 can pineapple chunks in juice--don't use the heavy syrup kind! (i use store brand) |
Directions:
1. Cut Neufchatel into 6 slices each package (for easier blending). 2. Cream with blender, mixer, or food processor. 3. Add some of the pineapple juice from the can, to taste and blend in. 4. If you are using a mixer, chop your pineapple chunks into small pieces and add to the cream cheese mixture. Add several tablespoons full, as desired. (You can always add more after blending). 5. If you are using your blender or f.p., add as many pineapple chunks as you wish and pulse chop to blend. Remember, you want to see bits of pineapple so don't over do it! 6. Chill for 45 minutes or more and enjoy with your favorite crackers! |
