                    This is a moist, light, crab cake that is easy to prepare Ingredients: 
                    
                        
                                                1 egg, slightly beaten  |  
                                                1/4 cup mayonnaise  |  
                                                1/2 cup soft bread crumbs  |  
                                                2 green onions, chopped (tops and bottoms)  |  
                                                1 tsp. minced parsley  |  
                                                1/4 tsp. salt  |  
                                                1/4 tsp. pepper  |  
                                                2 cans (6 oz. each) crab meat, drained, cartilage removed  |  
                                                2 tbl. oil  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Combine egg, mayonnaise, bread crumbs, onions, parsley, salt and pepper, blending well. 2. Add crab meat 3. Shape into 6 patties 4. Heat oil on med. high in a frying pan 5. Reduce heat to med. 6. Fry each side until browned, 5-6 minutes each side                              |
