Super quick couscous side dish. It is colorful and easy! Ingredients:
1 onion, diced fine |
1 clove garlic, crushed |
1 t. olive oil |
1 c. frozen peas |
1 t. minced fresh parsley |
salt and pepper |
1-1/2 c. vegetable or chicken broth |
1 c. couscous |
Directions:
1. In a saucepan, sauté the onion and garlic in the oil over medium heat until soft, about 5 minutes. Stir in the peas, parsley, salt, pepper, and broth and bring to a boil. Stir in the couscous, cover, and return to a boil. Remove from the heat and let the mixture sit covered for 5 minutes, or until the liquid is absorbed. 2. Fluff with a fork before serving. |
