Easy Cornbread Zucchini Stuffing |

I needed to use a cup of grated zucchini and since I was making chicken, and thinking stuffing, I came up with this original recipe . Easy, microwave and real tasty! This is really a great side dish! I hope you like it. Ingredients:
1 cup finely grated or shredded zucchini well drained |
1 small onion grated |
1 small tomato chopped |
1 garlic clove minced |
seasoning to taste ( chopped herbs, salt and pepper to taste etc ) |
1 cup yellow cornmeal |
1 cup baking mix |
1 egg |
1 tbs olive oil |
1 tbs mayonnaise |
1/4 cup milk |
Directions:
1. Mix all by hand and place in a Pyrex or glass pie plate 2. Cook hi in Micro for 2 minutes, 3. Pause and scramble the mixture. 4. It will still be soft and loose 5. Continue to cook another minute or two until mixture appears set but not dry ( varies with your oven's wattage ) 6. Remove from oven and use a fork to loosen and mix into a stuffing texture. 7. Great plain or moisten with a gravy 8. Note: time varies with the wattage of your micro oven ,so be careful to not over cook as it may continue to cook when out of the oven |
