Easy Coconut Fried Shrimp |

A different twist on this favorite fried dish! Don't skip the coconut oil! Ingredients:
2 pounds large shrimp |
1 cup flour |
1 teaspoon granulated sugar |
1/2 teaspoon salt |
1 egg, slightly beaten |
1 cup ice water |
2 tablespoons virgin coconut oil |
1 teaspoon curry powder |
2/3 cup grated coconut |
vegetable oil for frying |
Directions:
1. Shell and devein shrimp leaving tail intact. 2. Pat shrimp dry with paper towel and set aside. 3. In a bowl, combine flour, sugar, salt, egg, water and 2 tablespoons coconut oil. 4. Beat flour mixture until batter is smooth. 5. Mix together in a separate bowl, combine the coconut and curry powder. 6. Dip shrimp into batter and then into coconut mixture. 7. Deep-fry in vegetable oil until golden. |
