These gluten-free pancakes come out nice and fluffy. You will want that really soft banana for this recipe. Ingredients:
3 egg |
3 tbsp butter |
3 tbsp classic coconut milk |
2 tsp honey |
1/4 tsp baking powder |
1 medium banana |
1/4 tsp real salt |
4 tbsp coconut flour |
Directions:
1. Whisk together eggs, coconut milk, butter, honey, baking powder, salt and the banana. Blend until smooth and uniform. Whisk in coconut flour – add slowly (coconut flour thickens stuff quickly). 2. Using a ladle, pour the batter onto a medium heat griddle sprayed with PAM. Watch closely, will cook quickly. Flip after ~ 1.5 minutes/side. 3.
