I found this in a 'Best of Sunset' magazine. I wanted something really simple as a side dish to a recent backyard BBQ and this filled the bill. Using the pre-cut coleslaw mix, found in bags in the lettuce area of the produce department, made this really quick and easy. Ingredients:
1 1/3 cups nonfat plain yogurt or 1 1/3 cups fat-free mayonnaise |
1/4 cup dijon mustard |
1/4 cup white wine vinegar |
12 cups coleslaw mix |
1/2 cup thinly sliced green onion, including the green tops |
salt, to taste |
pepper, to taste |
Directions:
1. In a large bowl, combine yogurt, mustard and vinegar. 2. Add coleslaw mix and onions and stir to combine. 3. Add salt and pepper to taste. |
