Juicy salmon fillet grilled with onion, garlic, and orange. Ingredients:
8 oz salmon fillet, cut 1 inch thick (fresh or frozen) |
1 tsp grated orange peel (or lemon peel) |
1 tbsp orange juice (or lemon juice) |
1/8 tsp black pepper |
1 tbsp garlic cloves, minced |
1 tbsp fresh chopped green onion |
1 oranges, peeled and sliced crosswise |
Directions:
1. 1 Thaw fish, if frozen. Rinse fish; pat dry with paper towels. 2. 2 In a small bowl, stir together orange peel, orange juice, pepper, and garlic. 3. 3 Preheat broiler. Place fish on the greased unheated rack of a broiler pan. 4. 4 Brush with half of the orange juice mixture. Broil 4 inches from the heat for 5 minutes. 5. 5 Using a wide spatula, carefully turn fish. Brush with the remaining orange juice mixture. 6. 6 Broil for 3 to 7 minutes more or until fish flakes easily when tested with a fork. 7. 7 Cut the fish into 2 portions. Sprinkle with the green onion and serve with orange slices. |
