Easy Chipotle Chili And Cornbread |

Hubby's work did a chili cook off. I submitted this and it was a hit. The cornbread is always a winner. My Mom's hit! The chili is so easy to do if you're pressed for time. Ingredients:
2 lb. boneless chuck pot roast cooked & cubed |
1/2 lb. pork loin roast cooked & cubed |
1 whole onion chopped |
1 pkg carrol shelby’s chili kit |
2 1lb 12oz cans ro-tel diced tomatoes & green chili |
1 can chipotle pepperss in adobo sauce |
1 can v8 juice |
3/4 c water |
adjust ingredients to taste. |
Directions:
1. 1) In large pot saute onions and add cubed meat. Stir well. 2. 2) Add Chili mix, V8 juice, Chili mix, diced tomatoes & green chili, 3/4 water. 3. 3) Stir well and heat through. Add chopped chipotle peppers to taste. 4. 4) Simmer for 30-45 min. Thicken with masa packet if preferred. 5. 5) Add chili beans last. |
