Easy Chicken Nuggets (Can Be Gluten-Free!) |

I made these when I found a recipe for fish and chips and started making chicken, as my kids don't eat much fish! They turned out really well. My kids ate them up! We only needed to have one chicken breast cut up for the size of our family (Mom, Dad, and three little kids), but we could have easily had more! The cooking time is per batch. You could use some fish and cook them the same way and I'm sure that it would turn out just as yummy! Ingredients:
1 -2 chicken breast, depending on the size of your family |
1 egg |
2 tablespoons milk |
1 cup breadcrumbs (can use gluten-free breadcrumbs!) |
1 cup cornmeal |
2 tablespoons cornstarch |
1 tablespoon poultry seasoning (or sage) |
salt and pepper |
3 tablespoons sesame seeds |
3 cups oil (any kind you may have. i used canola oil) |
Directions:
1. Cut up the chicken in bite size pieces. 2. Using three seperate bowls, in the 1st bowl, mix the egg with a fork and add the milk. Mix well. 3. In the 2nd bowl, add the cornmeal, cornstarch, poultry seasoning, salt, and pepper and mix well. 4. In the 3rd bowl, mix the bread crumbs and the sesame seeds. Stir well. 5. Heat a large round pot (I used a saucee pan, which is a large, rounded sauce pan), add the oil and heat at Med/High for about 5 minutes and the oil is hot. 6. Dip the chicken pieces into the cornmeal mixture, then into the egg, and then into the bread crumbs and dip into the hot oil. Fry about 5 pieces at a time. 7. Fry the chicken pieces until golden brown, which should take about 5 minutes per batch. 8. Remove from hot oil and allow to drain on paper towels. |
