Easy Chicken Mushroom Stew |

This delicious stew is easy, fast, and a well-balanced meal-in-a-pan. Ingredients:
1 medium onion, coarsely chopped |
1 (9 ounce) package sliced mushrooms |
1 teaspoon oil |
1 (14 1/2 ounce) can chicken broth |
3 tablespoons white wine |
thyme |
paprika |
bay leaf |
black pepper |
1 large boneless skinless chicken breast |
2 tablespoons butter or 2 tablespoons margarine |
2 tablespoons flour |
1 large potato, coarsely diced |
1/2 cup frozen mixed vegetables, thawed |
Directions:
1. Mix onion and mushrooms with oil in covered medium saucepan. Saute on low for 5-10 minutes until mushrooms give up their liquid. 2. Add chicken broth, wine, sprinkle of thyme, sprinkle of paprika, sprinkle of black pepper and the bay leaf. Simmer for 20 minutes. 3. Coarsely chop the chicken and add to the broth. Simmer 5-7 minutes until the pink is gone. 4. While the broth is simmering, in a separate pan, boil the potato for 4 minutes, add vegetables and boil for 3 more minutes. 5. Drain potatoes/vegetables, and rinse with cold water immediately. 6. Melt the butter and mix in the flour. Stir by spoonfuls into the broth, until thickened. 7. Add potatoes/vegetables to stew and serve immediately. |
