An easy week night dinner Ingredients:
10 oz chicken breast |
2 scallions |
1/4 cup salsa |
1/2 cup shredded cheddar cheese |
11 corn tortillas |
3 cups enchilada sauce |
Directions:
1. poach chicken and shred once cool. dice scallions. mix shredded chicken, scallions, salsa and cheese together in a bowl. scoop 1/4 cup of mixture into each tortilla, roll and place seem-side down in a baking dish sprayed with cooking spray. Top with enchilada sauce and bake 30 minutes. |
