When I was growing up in southern California, this dish made with green enchilada sauce was called enchiladas suiza. It is good with either color of sauce in my opinion. Ingredients:
10 flour tortillas |
10 ounces cream of chicken soup |
8 ounces sour cream |
4 chicken breasts, cooked, cubed |
1 (4 ounce) can diced green chilies |
1 (2 1/4 ounce) can sliced black olives |
8 ounces shredded cheddar cheese |
1 (16 ounce) can enchilada sauce |
Directions:
1. Combine soup and sour cream; stir in chicken, chiles and olives. 2. Spoon â…“ to 1/2 cup chicken mixture down the center of each tortilla; top with 1-2 Tbsp cheese. 3. Roll up and place seam side down in a greased 13x9 dish. 4. Pour enchilada sauce over top; sprinkle with remaining cheese. 5. Bake, uncovered 350 for 35 minutes or until heated through. |
