I never had nor made Chicken and Dumplings before so I went looking for a recipe to make it...Took a little from this one and that one and came up with this...Tasty. Ingredients:
1 chicken, cooked |
2 tbls. oil |
1 small onion, chopped |
2 cans chicken broth |
1 tsp. poultry seasoning |
salt and pepper to taste |
1 lb. carrots, chopped |
2 celery stalks, chopped |
1 can buttermilk biscuits |
1 can cream of mushroom soup |
1 cup chicken gravy |
Directions:
1. Remove skin from chicken and chop into large pieces 2. In skillet, add oil and heat to medium 3. Add onions and saute until tender 4. In Dutch oven, add next 5 ingredients and bring to simmer 5. On lightly floured surface, roll each biscuit to 1/4 inch 6. Cut into 4 pie pieces 7. Skim surface of any scum that has accumulated too top 8. Add cream of mushroom soup and gravy 9. Bring back to simmer 10. Stir in biscuit dumplings a few at a time 11. Once all are added, cover and simmer for 10 minutes |
