Simple weeknight supper chicken is great served with noodles or rice to soak up the sauce. Recipe source: Bon Appetit (October 1990). Ingredients:
2 1/2 tablespoons butter or 2 1/2 tablespoons margarine |
1 tablespoon olive oil |
1 onion, chopped |
1/2 tablespoon dried thyme |
3 tablespoons dry white wine or 3 tablespoons white grape juice |
1/2 cup cream of chicken soup |
1/2 cup half-and-half |
4 boneless chicken breast halves |
salt and pepper |
Directions:
1. Melt 1 tablespoon butter with oil in saucepan over medium heat. 2. Add onion and thyme and sauté 4 minutes or until onion is soft. 3. Add wine or grape juice and cook until reduced by half (5-10 minutes). 4. Add soup and half and half and stir until heated (5 minutes). 5. While sauce is cooking, melt remaining 1 1/2 tablespoons butter in skillet over medium high heat. 6. Add chicken to skillet and cook until done about 7-10 minutes, turning occasionally. 7. Spoon sauce over chicken. |
