This Easy Cheesy Soup is a comfort food. Served with a piece of homemade bread is a wonderful fall meal. Ingredients:
2 cups potatoes - chopped-cubed small |
1 cup celery, chopped fine |
1/2 cup onion, chopped fine |
2 cans of chicken broth ( i use chicken bullion and water)divided |
one pkg. of california blend vegetables |
1 pound of velveeta cheese that is cubed |
1 can of cream of chicken soup |
1 can cream of celery soup |
Directions:
1. 2 cups potatoes 2. 1 cup celery 3. 1/2 cup onion 4. Cook in 1 can of chicken broth ( I use chicken bullion and water) until veg. are tender. 5. Cook one pkg. of California blend veg. until tender( I steam mine in the microwave). 6. Add the veg. to the potato mixture. 7. Add the following: 1 pound of Velveeta cheese that is cubed, 1 can of cream of chicken soup, 1 can cream of celery soup and 1 can of chicken broth. 8. Simmer gently for 10-15 min. 9. Watch carefully so the cheese doesn't scorch. |
