I work in a nursing home. One of my residents told me how to make this. Whenever I made it,I would bring her a bowl. God bless her soul, I always think of her when I make it. To slice potatoes and onion, I use a salad shooter. Ingredients:
6 potatoes (sliced) |
1 onion |
1 pint half-and-half |
6 slices american cheese |
1 tablespoon butter |
black pepper |
Directions:
1. Peel potatoes and slice and put in 4 qt kettle. 2. Add sliced onion. 3. Add just enough water to cover, boil till potatoes are tender. 4. Sometimes I have to ladle some water off after boiling (BUT DO NOT DRAIN WATER). 5. Add butter and cheese. 6. Stir to break-up potatoes. 7. Add milk and pepper. 8. Simmer 10 minutes. 9. Serve and add your own salt. 10. Good with crusty bread or toast. 11. Sometimes I sauté celery and onions, add carrots, garlic, chicken broth, ham, bacon or use evaporated milk. Use different potatoes for a change. ENJOY! |
