What to do with all that leftover steamed rice from Chinese takeout? This is what I came up with one night. It's now an old standby for my family. Ingredients:
2 (or more) cups cooked rice |
1 can black beans, drained (or i've used chili beans, s&w santa fe beans) |
1 can fire roasted chopped green chiles |
2 cups shredded cheddar (or i've used pepper jack if you want it hotter) |
Directions:
1. In large bowl, combine cold coked rice, chiles, beans, and half cheese. 2. Mix well 3. Spread into greased 8x8 casserole 4. Top with remaining cheese 5. Bake in 350 degree oven for 30 to 35 min. (just till fully heated and cheese starts to bubble) 6. Enjoy. 7. Goes great with grilled chicken or steak. 8. You got your veggie and starch in one side. |
