this is ann easy cheesy kid friendly casserole that is scrumptious Ingredients:
3 large summer squash , diced |
1 onion, diced |
1 can (regular size) cream of mushroom soup |
1 box of cheese crackers |
1/2 stick of butter, room temp |
2 cups shredded sharp cheddar cheese |
1/2 cup of milk |
Directions:
1. saute squash and onions in 1 tbsp of butter just until soft, place into a 9 inch casserole dish. 2. in a mixing bowl mix together the cream of mushroom soup, butter, 1 cup of shredded cheese and milk until blend and soup isn't lumpy. 3. crush entire package of cheese crackers, mix all but 1 cup of the crumbs into the soup mixture. 4. pour over the squash and fold to coat. 5. toss the remaining crumbs and remaining cheese together and top the casserole. 6. cover with aluminum foil and bake at 350 degrees F for 30 mins or until all the cheese is melted and the sauce is bubbly.
