Easy Cheesey Golden Potato Squares |

Creamy, cheesey, buttery potato dish that we love. Found online several years ago. Ingredients:
5 lbs potatoes |
2/3 cup butter melted |
1 onion chopped |
1 tbs minced garlic |
12 oz can evaporated milk |
4 eggs beaten |
salt and pepper to taste |
3 cups shredded cheddar cheese |
Directions:
1. Peel potatoes and place in cold water set aside 2. Preheat oven to 350o 3. Pam a 9x13 baking pan 4. Melt butter in a lge skillet 5. Add onion and garlic saute until soft 6. Add in the milk and bring to a boil and remove from heat 7. Combine eggs salt and pepper beat until frothy 8. Shred the potatoes and add to the egg mixture toss to combine 9. Add in the milk mixture 10. Set aside 1 cup of the cheese and add the rest to the potato mixture 11. Transfer mixture to the pan 12. Bake uncovered for 45 min 13. Remove from the oven and sprinkle the remaining cheese over top 14. Return to oven and continue baking for an additional 25-30 min. |
