This soup is incredibly easy to make and always warms you on a cold day. If you don't like celery, broccoli will substitute just fine. Ingredients:
3 cups diced potatoes |
2 cups water |
1/2 cup sliced celery |
1/2 cup sliced carrot |
1/2 cup chopped onion |
1 teaspoon parsley |
1 chicken bouillon cube |
1/2 teaspoon salt |
1 dash black pepper |
1 1/2 cups milk |
2 tablespoons flour |
1/2 lb velveeta cheese, cubed |
Directions:
1. In a large pot combine the first 9 ingredients. 2. Cover, and simmer for 20 minutes. 3. Gradually add flour to milk. 4. Mix well. 5. Add to vegetables. 6. Cook until thickened. 7. Add cheese, and stir until melted. 8. Serve on a wintery day! |
