Easy Cheese and Tomato Macaroni |

A tasty dish of macaroni and cheese enlivened with crushed tomatoes. You'll enjoy this one! Ingredients:
2 (14 ounce) packages macaroni & cheese dinner mix |
1 tablespoon olive oil |
1 cup finely chopped onion |
1 cup thinly sliced celery |
1 (28 ounce) can ready crushed tomatoes |
grated parmesan cheese (to garnish) |
sliced green onions or celery leaves (to garnish) |
Directions:
1. Cook the macaroni as directed; drain. Meanwhile, heat oil in skillet. Add the onions and celery; saute 3 minutes or until tender. 2. Combine the tomatoes with the cheese packages from the dinners in a small bowl. Stir into vegetable mixture. Simmer 3-4 minutes until thickened and heated through. 3. Add macaroni to skillet. Stir until well-coated with sauce. Heat thoroughly, stirring well. To serve: sprinkle with Parmesan cheese and sliced green onions or celery leaves, if desired. |
