We love to use chayotes for slaw. It's flavor mild, texture with a little crunch and it compliments hot and spicy foods well. Chayotes are called vegetable pears and may be eaten cooked and raw . 2 chayotes, peeled and shredded |
2 tsp minced fresh ginger |
1 tbs fresh chopped red onion |
mayonnaise to bind ( or oil and white vinegar- dash of sugar if desired for non mayo slaw ) |
salt and pepper to taste |
chill well |
Directions:
1. Simply Combine all and chill well 2. Great served with spicy and hot foods 3. A good source of amino acids and vitamic C |
