Easy Champagne Strawberry Soup |

a wonderful cold fruit soup, use for dessert or appetizers Ingredients:
4 cups water |
9 cups strawberries |
1 cup sugar |
1 lemon juiced |
1/2 cup champagne |
6 mint leaves for soup and more mint leaves for garnish |
lime sorbet or vanilla ice cream |
Directions:
1. Time does not include 3 hour chill 2. Bring all to a boil in saucepan except mint leaves and ice cream. 3. Simmer 10 minutes. 4. Then add mint leaves. 5. Cool, blend and strain well. 6. Chill very well at least 3 hours 7. Place chilled soup in bowls and garnish with fresh mint leaves and a little scoop of lime sorbet |
