This was a throw it together dish I made last autumn. It is super easy and really yummy. Ingredients:
4 cups cubed red baking apples, i didn't peel them, but you can |
1/3 cup corn flake crumbs |
1/4 cup firmly packed brown sugar |
1/4 chopped dry roasted peanuts |
3 tablespoons all-purpose baking flour |
2 tablespoons butter, melted |
caramel ice cream topping |
fresh lemon juice, i used about 2 tablespoons |
Directions:
1. Heat the oven to 400°. 2. Spray a square baking dish, about 1-1/2 quart, with non-stick cooking spray. 3. In a bowl, combine corn flake crumbs, bown sugar, peanuts and flour. 4. Mix well. 5. Stir in butter and mix well again. 6. In a large bow, combine the apples, caramel topping and lemon juice. 7. Mix well. 8. Spoon into baking dish and sprinkle with crumb mixture. 9. Bake at 400° for 20-25 minutes or until apples are tender and mixture is bubbly. 10. Cool slightly before serving. 11. The apple layer will be saucey . 12. Serve with whipped cream or ice cream if desired. |
