Easy Cajun Boiled Peanuts |

Boiled peanuts are a southern staple. When done, they take on a consistency similar to a cooked bean with a meaty quality. They are quite salty, and, with the addition of some Cajun seasoning, these also have a nice spicy undertone. Ingredients:
2lbs raw peanuts in the shell, rinsed well |
1/2 cup kosher or sea salt(don't use table salt) |
1/2 cup cajun seasoning |
1-4t louisiana hot sauce |
Directions:
1. Put peanuts in the pot of a slow cooker and fill with water to cover them. 2. Add remaining ingredients and carefully give a lil stir to distribute. 3. Cover and cook on low 15-24 hours, depending on your desired consistency. You can stir these after the first 10 hours or so, if you want. Peanuts should remain covered with water so if you're cooker is older or doesn't have a tight fitting lid, you may have to add more. 4. Drain well before serving. Best served warm, but make sure to refrigerate any uneaten peanuts. You can pop 'em in the microwave for a few seconds to serve, later, if desired. |
