Easy Broccoli Cheese Soup |

I combined a couple of broccoli soup recipes to come up with this one. My husband and I love it! Ingredients:
2 tablespoons butter |
2 tablespoons olive oil |
1 medium onion, chopped |
1/2 cup carrot, chopped small |
2 large garlic cloves, minced |
2 tablespoons flour |
1 cup chicken stock |
2 cups milk |
1 1/2 cups velveeta cheese, cubed |
10 ounces chopped broccoli (thawed, if frozen) |
1/2 teaspoon ground mustard |
hot sauce, to taste (i use about 1 tsp) |
Directions:
1. On medium heat, in a large pot melt butter and olive oil. 2. Add onion, garlic, carrots. Sweat. 3. Add flour and stir. 4. Cook for 2 minutes, then add chicken stock and milk. 5. When liquids are hot (not boiling) add velvetta and stir until cubes dissolve. Add broccoli, mustard and hot sauce. 6. Enjoy! |
