Easy Broccoli Cheese Soup

I combined a couple of broccoli soup recipes to come up with this one. My husband and I love it!
Ingredients:
2 tablespoons butter
2 tablespoons olive oil
1 medium onion, chopped
1/2 cup carrot, chopped small
2 large garlic cloves, minced
2 tablespoons flour
1 cup chicken stock
2 cups milk
1 1/2 cups velveeta cheese, cubed
10 ounces chopped broccoli (thawed, if frozen)
1/2 teaspoon ground mustard
hot sauce, to taste (i use about 1 tsp)
Directions:
1. On medium heat, in a large pot melt butter and olive oil.
2. Add onion, garlic, carrots. Sweat.
3. Add flour and stir.
4. Cook for 2 minutes, then add chicken stock and milk.
5. When liquids are hot (not boiling) add velvetta and stir until cubes dissolve. Add broccoli, mustard and hot sauce.
6. Enjoy!
