If you are in a real hurry and don't have time to make a side dish, you can't beat these. Because of the scallions and sour cream, your guests will never know they are aren't from scratch . Ingredients:
4 cups water |
2 cups chopped scallions (about 15 scallions) |
1/4 cup unsalted butter (1/2 stick) |
1 teaspoon salt (kosher) |
3 cups instant mashed potato flakes |
1/2 cup sour cream |
1/4 freshly ground pepper |
Directions:
1. In a large sauce pan, combine the water, scallions, butter, and salt, boil for 4 to 5 minutes. 2. Remove from heat and add the potato flakes and mix well. 3. Stir in the sour cream and pepper. |
