This is a great dish for Thanksgiving or Christmas morning because you can prepare it ahead of time and warm it in the microwave since your oven is probably already occupied! A very good Hoosier friend served this when my husband and I visited this fall and we fell in love with it. I make one at the beginning of the week, and he can warm a serving each morning for a quick, satisfying breakfast instead of stopping for fast food on the way to work! Ingredients:
6 -8 slices whole wheat bread |
1 lb bulk sausage, cooked (we use jimmy dean hot sausage) |
6 eggs |
6 slices cheese, any flavor |
2 cups milk |
Directions:
1. Grease bottom of 13 x9 x2 pan using either spray butter or Pam. Lay bread in bottom of pan. 2. Cook sausage (can also add onion, green pepper or whatever other ingredients you would normally like in an omelet). 3. Beat eggs and add milk. 4. Layer sausage over bread, then cheese slices. Pour egg and milk mixture over all. Let sit over night, covered with foil. Bake the next morning at 350 degrees for one hour. |
