Blueberry muffins are so easy to make with little effort. They are so delicious and are ready in no time.Janie Ramming, Duncan, Oklahoma Ingredients:
3 cups king arthur unbleached self-rising flour |
1-1/2 cups sugar |
1 cup buttermilk |
1/2 cup canola oil |
2 eggs, lightly beaten |
2 cups fresh or frozen blueberries |
Directions:
1. In a large bowl, combine the flour and sugar. In another bowl, combine the buttermilk, oil and eggs. Stir into dry ingredients just until moistened. Stir in blueberries. 2. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 14-18 minutes or until golden brown and a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm. Yield: 2 dozen. |
