Easy Blueberry Lemon Bars |

Make this while blueberries are in season and inexpensive, too. Light, lemony and just think how good those blueberries are for you! This MUST be healthfood. From via the Pittsburgh Post-Gazette Ingredients:
2 c. fresh or frozen blueberries |
1 t. sugar |
2 t. fresh lemon juice |
zest of 1 lemon, divided |
1 box yellow cake mix |
4 eggs |
1 stick butter, softened |
2 3/4 c. powdered sugar |
8 oz. cream cheese |
Directions:
1. Preheat oven to 325. 2. Combine blueberries with sugar, lemon juice and half of the lemon zest. Set aside. 3. Mix cake mix with 1 egg, butter, and the rest of the lemon zest. Pat into a buttered and floured 13X9 baking pan. 4. Beat powdered sugar, cream cheese, and remaining 3 eggs until smooth. Gently stir in blueberry mixture; pour over cake. Bake 45-55 minutes, or until browned. Let cool completely; chill and cut into squares. Dust with powdered sugar. |
