I use this recipe as a side dish for Arroz con Pollo, or it makes a great vegan main dish served with rice and chopped raw onion. Ingredients:
2 tablespoons olive oil |
1 medium onion, chopped |
1 medium green pepper, chopped |
4 garlic cloves, minced |
2 (15 ounce) cans unseasoned black beans (i prefer goya) |
1/2 teaspoon cumin powder |
1 teaspoon ground oregano |
1/2 teaspoon salt |
1/4 cup white wine |
1 teaspoon sugar |
2 tablespoons cider vinegar |
Directions:
1. Put olive oil in a large saucepan over medium heat. 2. Add onions and green peppers and saute until onions are translucent. 3. Add minced garlic and saute for several more minutes. 4. Add beans, oregano, cumin, salt and white wine. Bring to a boil and reduce heat to low. 5. Simmer for about 2 hours. 6. Just before serving stir in sugar and vinegar. |
