~~A very easy, and spicy, soup to put together. It can easily be vegetarian by using veggie stock, or, it's also great with strips of steak, added. I LOVE this served with a dollop of sour cream and a simple cheese quesadilla. Read more . :) Ingredients:
30-45oz black beans, undrained(depending on the size of the cans |
1/2 cup red onion, diced |
4-6 cloves garlic, minced |
1-4t jarred jalapeno peppers, diced(this will determine most of the heat, so use to your taste) |
1 cup beef stock |
2t brown sugar |
juice from 1 lime |
couple dashes red wine vinegar |
1-2t chili powder |
1t/2-1t cayenne |
1/4 cup fresh cilantro, chopped |
salt |
sour cream for serving |
Directions:
1. Combine all ingredients besides lime juice, salt , cilantro and sour cream in large saucepan and heat to high simmer. 2. Simmer 30-60 minutes, adding salt cilantro and lime juice in the last few minutes. 3. Garnish with sour cream. 4. *This can also be made in a slow cooker but will only need to cook a couple of hours, adding juice, salt and cilantro just prior to serving. |
