Easy, delicious and quick monkey bread with your choice of blueberries or blackberries. Ingredients:
⅔ cup sugar |
2 tablespoons cinnamon, divided |
11/4 - 11/2 cups blueberries or blackberries |
⅔ cup brown sugar |
11/4 sticks (10 tablespoons) margarine |
1 teaspoon vanilla |
4 pkgs (10 oz ea) refrigerated buttermilk biscuits |
Directions:
1. Thoroughly grease a 10 x 4 tube pan. 2. Mix ⅔ cup sugar and 1 tablespoon cinnamon. 3. Cut biscuits in quarters. Roll each piece in sugar mixture. 4. Arrange about one-fourth of the biscuit pieces and 1/4 - 1/2 cup of the berries in an even layer in pan. 5. Place blueberries between biscuit pieces, creating a mosaic effect. Repeat three more times with remaining biscuits and berries, covering berries of one layer with biscuits in next layer to avoid a column of berries. 6. In saucepan combine sugar, margarine, vanilla, cinnamon and the additional 1 cup berries. Bring to a boil, reduce heat. Cook, stirring frequently until sugar is dissolved and margarine melted. Pour over biscuits in pan. 7. Bake in a preheated 350ºF oven for 65 minutes or until done. 8. Lift or turn out onto cake plate. |
