Easy Beefy Vegetable Soup |

Canned vegetables help to make this a quick and easy meal. Served with bread it is a warming and filling winter meal. Ingredients:
1 lb. lean ground beef |
1 small onion |
2 cloves garlic |
2 to 3 potatoes, peeled and diced |
1 can whole tomatoes, diced. retain juice |
1 can whole kernal corn |
1 can green beans |
1 can peas |
salt and pepper to taste |
4 to 6 cups beef stock or beef soup base mixed with water to equivalate |
Directions:
1. Brown ground beef in skillet. Add onion and cook until tranlusent. Remove from heat, add garlic and stir. Transfer to stock or soup pot. Add tomatoes with juice. Drain canned vegetables and add to pot. Add beef stock to your preference for soup thickness and simmer 15 minutes. Add potatoes and cook until tender. Season with salt and pepper to taste. |
