Easy Banana And Carrot Bake

compliment your tea time with a warm slice or two of this very tasty bake...great for afternoon tea guests
Ingredients:
3 large bananas (ripe) mashed
1 large carrot (finely grated)
3 cups plain flour
1and a half tablespoon baking powder
1 teaspoon bicarbonate
a pinch of salt
3 tablespoon vanilla essence
2 eggs (lightly beaten)
half a cup vegetable oil
1 cup and a half white sugar
2 tablespoon orange rinds (finely shredded)
Directions:
1. preheat oven to 180 degrees Celsius
2. grease a large loaf pan with margarine or butter and set aside
3. mix all the dry ingredients together
4. beat the eggs and oil together
5. form a well in the dry ingredients
6. pour the egg and oil mixture and mix
7. add the banana and carrot and mix
8. the mixture should be smooth but not too soft or dry
9. pour in the prepared tin and bake at 180 degrees Celsius for about 40 minutes or until a small fork comes out dry when inserted in the cake.
10. cool in baking tin for about 5 minutes and turn over
11. enjoy warm with butter or plain
