Easy Balsamic Beets and Pineapple |

Easy and sweet. Ingredients:
1/2 cup balsamic vinegar |
1/4 cup brown sugar |
15 ounces sliced beets |
4 ounces crushed pineapple |
2 carrots |
1/4 cup chopped walnuts |
1/8 teaspoon ground pepper |
Directions:
1. In a saucepan, add vinegar and brown sugar. 2. Stir and dissolve sugar. 3. Cook for 5 minutes on medium heat, while stirring. 4. Drain beets and julienne. 5. Drain pineapple. 6. Peel and shred carrots. 7. Combine beets, carrots and pineapple in a bowl. 8. Add balsamic mixture and toss. 9. Add the chopped walnuts, pepper and toss. 10. Chill for 30 minutes. |
