Found this in a cookbook from the library. Sounds good and easy! Ingredients:
1 tablespoon olive oil |
1 onion, chopped |
2 celery ribs, chopped |
1 garlic clove, minced |
4 cups vegetable broth |
1 sweet potato, peeled and diced |
1 cup edamame |
2 cups baby spinach |
salt and pepper |
Directions:
1. Heat oil in saucepan. Add onion, celery and garlic, till softened. Add broth, bring to boil. 2. Add sweet potatoes, edamame, reduce to simmer, cook til tender. Stir in spinach till wilted. Salt and pepper to taste. |
