Easy side salad - goes great with anything. Ingredients:
one package arugula |
olive oil |
lemon juice |
salt |
pepper |
Directions:
1. Wash arugula & let dry. 2. Place arugula in large serving bowl. 3. In small bowl, mix about 1/4 cup olive oil and 2 tbsp lemon juice. 4. Pour mixture on arugula & add salt/pepper. 5. Mix with salad thongs until arugula coated with dressing. 6. Serve immediately. 7. I love this salad on top of pizza - it adds a tangy taste & makes you feel better b/c you're adding your veggies! |
