Very simple and quick to put together, this is a nice, thick soup with warming wintry flavor, though of course it can be enjoyed year round. Ingredients:
2 cups butternut squash, cooked and pureed (it's pre-packaged and frozen at the grocery store) |
1 cup apricot nectar |
1 tablespoon half-and-half |
1/4 teaspoon cinnamon |
1/8 teaspoon nutmeg |
1/8 teaspoon ginger |
pepper |
Directions:
1. blend everything and simmer until warm or begins bubbling. 2. enjoy! |
