I was babysitting my 1 year old niece today and I wanted to bake a healthy treat for her to eat. I found this recipe and put her in her high chair so I could attemp them. Within 5 minutes they were ready for the oven. Read more . When They were done and cooled, I gave one to my niece (who is usually very picky!) and she asked for more! These muffins are very easy, and really good! Ingredients:

1-1/2 cup flour |
3/4 cup sugar |
1/2 tsp salt |
2 tsp baking powder |
1 tsp cinnamon |
1/3 cup vegetable oil |
1 egg |
1/3 cup milk |
1 apple; peeled, cored and chopped |
topping |
1/2 cup sugar |
1/3 cup flour |
1/3 cup butter, cubed |
Directions:
1. Preheat your oven to 400 F ( I used 350 F, 400 would burn them in my oven.) Grease muffin pan or line pan with muffin liners. 2. For muffins; Stir together flour, sugar, salt, baking powder, and cinnamon. Mix in the oil, egg and milk. Fold in the chopped apples. 3. Spoon batter into the greased or lined muffin cups. 4. For topping; Mix all ingredents in a small bowl. Mix with a fork. 5. Spinkle topping over the unbaked muffins. 6. Bake for 25-30 minutes. |
