Easy Apple Cinnamon Muffins |

I was playing around with egg replacers, and this recipe just sort of wrote itself. Ingredients:
1 cup flour |
1 cup brown sugar |
2 teaspoons baking powder |
1 teaspoon salt |
1 cup margarine |
1 teaspoon vanilla extract |
1 cup soymilk |
1 cup applesauce (sweetened) |
2 teaspoons cinnamon |
Directions:
1. Preheat oven to 400 degrees. 2. Mix dry ingredients. 3. Add margarine and mix in the remaining ingredients. 4. Grease muffin tin and fill each cup 2/3. 5. Bake for 20 minutes. |
