Easy and Light Chicken Piccata |

This is another Picata recipe from my Mom, that I think tastes better than most. I am not a fan of capers and it is easy on the lemon too. Just mild and tasty. This is also dairy free for those with dairy allergies. Enjoy! Ingredients:
6 boneless skinless chicken breasts |
1/3 cup flour, seasoned with |
salt and pepper, if you choose |
1/4 cup extra virgin olive oil |
2 garlic cloves, minced |
1/2 cup onion, chopped |
1 cup chicken broth |
2 tablespoons dried parsley |
fresh parsley, for garnish |
1 lemon, sliced |
Directions:
1. Prepare flour with salt and pepper if desired. 2. In a large skillet or electric frying pan, heat oil. 3. Dredge chicken in flour and lightly brown in oil, with the onion and garlic. 4. Cook on low and do not let the garlic get too brown. 5. Drain off any oil. 6. Add chicken broth and dried parsley. 7. Simmer for 5 - 10 minutes. 8. This will thicken in it''s own juices. 9. Just before serving, add lemon slices to each piece of chicken and cover for 1 minute. 10. Remove immediately and serve over rice or pasta. 11. For more lemon flavor, squeeze lemon into gravy while simmering for the one minute. |
