Instead of buying easter eggs, I normally bake this and give it to my family and friends' children it is a traditional easter cake, baked here in Gibraltar. Ingredients:
3 lbs self raising flour |
14 ounces sugar |
14 ounces butter |
8 eggs |
6 hard-boiled eggs |
2 tablespoons custard powder |
8 ounces coconut |
anise seed |
Directions:
1. rub butter and flour together, add sugar and aniseed, stir in beaten eggs,. 2. add the custard powder and the coconut. 3. knead and divide into 6. 4. form into 6 long ropes and. 5. place each on a tray, forming a circle, like a ring, and place a boiled egg at each end, where the dough meets. if you have kids, they can each decorate the eggs or paint them with food colouring. 6. cut 2 strips of the pastry, and place on the egg like an X. 7. bake in the oven (200c) for 45 minutes. |
